FAT! Our food is cooked with the minimum of pure 100% vegetable oil.  Occasionally we utilise coconut milk and fresh cream - please ask.

SALT! We only salt our food after cooking to ensure a minimum salt level (just great taste).

WHEAT! Wherever possible we try to avoid wheat as a thickening agent and prefer to use pulses, beans and potatoes. Some recipes do need wheat flour - please ask if in doubt.

SUGAR! We very rarely add sugar to a recipe, but occasionally a recipe calls for it, in which case we add the minimum at the end of cooking.

Our way of cooking is labour intensive and we believe this is what makes the difference. We would rather pay our staff to freshly grate blocks of whole parmesan cheese than purchase powdered cheese. Good quality, well cooked food can't be cheap but it is affordable and does compare favourably with most high street sandwich bars. (£1.30 - £3.75)
